For a quick appetizer that’s easy and endlessly versatile (just perfect for those last-minute Super Bowl parties), make miniature bread baskets that can serve as a tasty nest for any filling you desire. Preheat the oven to 350 degrees. Use a rolling pin to flatten slices of fresh sandwich bread (white or wheat) to about 1/8 of an inch thick. Using a round cookie cutter (or sharp knife), cut into circles. (Save crusts for breadcrumbs.) Brush both sides with olive oil or coat with cooking spray and press gently into muffin or pastry tins. Bake for about eight minutes or until lightly browned. Once cooled, the sky’s the limit. Pack them with peanut butter and jelly for a kiddie party or, for grown-up palates, fill with smoked salmon and top with a dollop of mayo mixed with lemon juice, dill and capers.

Hi, Thanks so much for showing this.I had a fancy-pants caterer that made these for a party I had. He filled them with a tiny Cesar salad. I tried to make them, but used butter. It didn’t work very well. I think these will be fabulous! How about flavored {i.e. garlic} oil? Thanks Sweetie!!!
